The verb “tagliare” ("to cut") has never been more appetising. The origins of tagliatelle go far back in time. Their history spans the ages. From the sixteenth century, onward through the nineteenth century writings of Pellegrino Artusi, and into the twentieth century when it was established that the perfect measurements of tagliatelle should be 8 millimetres in width, or 1/12,270th of Bologna’s Asinelli Tower. Bologna is a city where this fresh pasta is enjoyed with a traditional ragù sauce. In short, there is no joking around with tagliatelle.
After all, it is the only pasta whose claim to fame is that it was once abolished - as an act of provocation - by the writer and founder of the Futurist movement, Filippo Tommaso Marinetti. Talking about the history of tagliatelle is not enough, however, to confer how incredible the flavour is. We'll leave that to you to discover.
